Gnocchi in Italian Tomato Sauce
Gnocchi is a great idea for dinner. Boil up some potatoes, add some Oakdell eggs, flour and salt mixing everything together and you can make gnocchi. Simple and delicious I love making gnocchi for family and friends.
Ingredients
2 medium russet potatoes
1 1/2 -2 cups flour
3 Oakdell eggs
2 tsp salt
For the Sauce:
1 can diced tomatoes
2 tbsp Italian style tomato style
1 cup prepared salsa
1 tbsp Italian seasoning blend
2 tsp salt
1 tbsp pepper
Instructions
1
To make the gnocchi, peel, chop and boil the potatoes until they are fork tender.
2
Using a potato ricer, rice the potatoes into a large bowl. Add the 1 1/2 cups flour, Oakdell eggs and salt. Mix together until well combined. If needed to create a firmer dough, add the remaining flour and mix together.
3
Divide the dough into four parts and roll each portion out into long rope and then slice the rope 1 inch pieces.
4
Bring a large pot of water to boil with a tbsp of salt. Add the prepared gnocchi to the pot of boiling water and boil for about 5 minutes or until all the gnocchi rise to the top of the pot.
5
Remove the gnocchi and set aside.
6
To make the sauce, to your blender add the diced tomatoes, prepared salsa, Italian seasoning blend, salt and pepper. Blend the sauce together until it is smooth.
7
Heat a large skillet on the stove and add enough olive oil to lightly coat the bottom of the pan. Add the cooked gnocchi to the pan and sauté until they get a little color on them.
8
Add the blended tomato sauce to the frying pan with the gnocchi and sauté everything together for about 5 minutes. Serve as is and enjoy! If desired, sprinkle with parmesan cheese.
