Garlic Herb Grilled Salmon with Roasted Veggies
A flavorful, easy grilled salmon marinated in a zesty garlic-herb blend, served with a side of smoky roasted vegetables for a wholesome meal.
Ingredients
For the salmon:
4 salmon fillets
2 tbsp olive oil
Juice of 1 lemon
2 cloves garlic, minced
1 tsp dried oregano
½ tsp smoked paprika
½ tsp salt
¼ tsp black pepper
For the roasted vegetables:
1 zucchini, sliced
1 red bell pepper, sliced
1 red onion, sliced
1 tbsp olive oil
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper
Instructions

Marinate the salmon:
In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Rub over salmon fillets and marinate for 20 minutes.

Roast the vegetables:
Preheat oven to 400°F (200°C). Toss zucchini, bell pepper, and onion with olive oil, garlic powder, salt, and pepper. Roast for 20-25 minutes.

Grill the salmon:
Preheat grill to medium-high. Grill salmon for 4-5 minutes per side until flaky.

: Plate salmon with roasted vegetables. Garnish with extra lemon wedges.
