Garlic-Ginger Salmon with Citrus Quinoa Salad
Flaky salmon infused with garlic and ginger pairs beautifully with a bright citrus quinoa salad for a heart-healthy, omega-rich meal.
Ingredients
4 salmon fillets
2 tbsp olive oil
2 cloves garlic, minced
1-inch piece ginger, grated
1 tsp honey
2 cups cooked quinoa
1 orange, segmented
1/4 cup chopped parsley
Juice of 1 lemon
Salt and pepper to taste
Instructions

Marinate and Cook the Salmon:
Mix olive oil, garlic, ginger, honey, salt, and pepper. Coat salmon and bake at 375°F for 12-15 minutes.

Prepare the Quinoa Salad:
Mix quinoa, orange segments, parsley, and lemon juice.
