Fried Chicken
I love my fried chicken recipe because it always works for me. I may change the seasonings based on my mood, however, the technique never changes.
Ingredients
1 chicken, cut into fryer pieces
2 eggs
1/2 cup buttermilk
1 cup water
2 cups self rising flour
1 cup cornstarch
1/4 cup Italian seasoning
1 tbsp dill

1 tsp celery salt

1 gallon vegetable oil

Remove excess fat and skin from the chicken and set aside.

In a large bowl, add the eggs, buttermilk and water. Whisk together and set aside.

In a large bowl combine the self rising flour, cornstarch, Italian seasoning, dill, season salt, celery salt and pepper. Whisk everything together and set aside.

Preheat the frying oil in a large heavy bottom pot or fryer to 375.

Dip the chicken pieces in egg mixture and dredge in the flour mixture, knocking off excess flour. Repeat setting the prepared chicken on a baking sheet.

When the oil is hot, place the prepared chicken pieces (do in batches so you don’t crowd the chicken pieces) into the oil. Reduce the heat to 335 degree’s and fry for 20 minutes or until the internal temperature is 165 degree’s.
