Fresh Chicken Salad Sandwich with Baked Squash
This menu idea is truly comfort food. I love chicken sandwiches and when fresh squash from the garden is available to bake off and serve with it….well, now this is an amazing culinary treat.
Ingredients
4 cups shredded cooked chicken
1 cup mayonnaise
2 tbsp capers
1 tbsp sriracha
2 tbsp dijon style mustard
1/3 cup diced dill pickles
2 large celery stalk, diced
1 large carrot, peeled and diced
1 cup grapes, sliced in half
1 cup chopped French fried onions
1 small spaghetti squash, quartered seeds removed
1/3 cup brown sugar
1-2 tbsp season salt ( to taste)
Black pepper to taste
6-8 Croissants
Instructions

Add the shredded chicken to a large bowl along with the mayonnaise, capers, sriracha, dijon style mustard, diced dill peppers, diced celery, dice carrots, sliced grapes and the chopped French fried style onions. Mix everything together to combine, season to taste.

Spoon the chicken salad on the croissants and set the sandwiches aside until ready to serve.

To bake the squash, preheat your oven to 350 degrees, remove the seeds from the squash and cut into quarters or however many slices appropriate for the size of the squash. Sprinkle each slice with brown sugar, wrap in foil and bake until the squash is fork tender (about 25 minutes). Remove from the oven and serve with freshly made chicken sandwiches and enjoy.
