Fresh Cabbage Salad with Homely Ginger Peanut Dressing
This fresh cabbage salad is full of flavors and can easily be a healthy dinner too. It keeps well in the refrigerator and I think it tastes even better the next day!

Ingredients
3 cups shredded green cabbage
3 cups shredded purple cabbage
1 cup shredded carrots
1 cup shelled edamame
1/2 cup chopped fresh cilantro
1/2 cup sliced almonds
For the dressing:
1/4 cup rice vinegar
2 tbsps honey
2 tbsp soy sauce
1 tbsp peanut butter (creamy style)
1 tbsp freshly minced ginger
Instructions

In a large bowl add the shredded cabbage, carrots, edamame and fresh cilantro tossing everything together to combine.

In a small bowl mix the rice vinegar, honey, peanut butter and freshly minced together until combined.

Pour the dressing over the salad, toss to coat. Sprinkle with sliced almonds and serve with your favorite sides.
