French Bacon and Onion Tart
This tart comes from the Northeastern region of France and is a simple way to make lunch or dinner. I’m using sour cream and cream cheese to make this because they are readily available here in the United States.
Ingredients
1/2 cup sour cream
1 pkg cream cheese, softened (8 oz pkg)
1/8 tsp nutmeg
1/2 tsp salt
1/2 tsp white pepper
1 3/4 cups flour
1 tsp baking powder
1/4 cup olive oil
2 egg yolks
8 strips bacon, finely chopped
1 onion, thinly sliced
Instructions

Heat your oven to 450 degrees with a pizza stone inside.

In a large bowl, combine the sour cream, cream cheese, nutmeg, salt and pepper. Mix until fully incorporated. If desired, you can use creme fraiche and fromage blanc in place of the sour cream and cream cheese. Set aside.

In a separate bowl, combine the flour baking powder and a pinch of salt. Using a whisk, combine the dry ingredients together. Make a well in the center of the flour and add the olive oil and egg yolks. Using a fork, whisk the eggs and olive oil together and incorporate the flour to create a soft dough.

Divide the dough into 3 equal portions and roll each portion of dough out to about a 12 inch diameter on a sheet of parchment paper.

Divide the remaining ingredients into 3 parts dividing them between each rolled out dough portion.

Transfer each tart to the preheated pizza stone on the parchment and bake for about 20 minutes or until golden brown.

Remove from the oven, serve and enjoy with a chilled glass of pinot grigio!
