Adult Macaroni and Cheese
Do you have several types of cheese that are half eaten in your fridge? Use them all to create a gourmet cheese and macaroni dish to surprise your friends and family!
Ingredients
1 package elbow macaroni
4 tbsp butter
1/4 cup flour
4 cups milk (more or less)
2 cups assorted cheese (blue cheese, feta, mozzarella, brie…)
1/8 tsp freshly grated nutmeg (optional)
salt and freshly cracked pepper to taste

Prepare macaroni as directed on package.

In a large skillet add butter and melt. Add the flour to create a roux.

Add the milk into the pan and stir to blend the flour and butter mixture (roux). Bring to a boil and cook for 2 minutes.

Mixture will begin to thicken, add grated cheese.

Stir mixture to completely incorporate cheese.

Drain and rinse the macaroni.

Add the macaroni to a large bowl and pour the cheese sauce over the macaroni, add salt and pepper to taste; stir to incorporate.
