Fluffy Pancakes Using Homemade Cake Flour

By using a simple trick to create cake flour at home, you’ll get the perfect texture without any extra trips to the store. Whether it’s a weekend brunch or a weekday treat, these pancakes are easy to make and absolutely delicious. Serve them with maple syrup, fresh berries, or a dusting of powdered sugar for the ultimate breakfast experience.

Ingredients

For the Homemade Cake Flour: 1 cup all-purpose flour

2 tablespoons cornstarch

For the Pancakes: 2 cups homemade cake flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

2 large eggs

1 3/4 cups milk

1/4 cup melted butter

1 teaspoon vanilla extract


Instructions

Make the Homemade Cake Flour; In a bowl, measure 1 cup of all-purpose flour and remove 2 tablespoons.
 Add 2 tablespoons of cornstarch and whisk well.
 Sift the mixture several times to ensure even distribution.
 Repeat to make 2 cups for this recipe.

Prepare the Pancake Batter; In a large mixing bowl, whisk together the homemade cake flour, sugar, baking powder, and salt.
 In a separate bowl, beat the eggs, then add the milk, melted butter, and vanilla extract.
 Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.

Cook the Pancakes; Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
 Pour 1/4 cup of batter onto the hot skillet for each pancake.
 Cook until bubbles form on the surface and the edges look set, about 2 minutes.
 Flip and cook for another 1-2 minutes until golden brown.
Repeat with the remaining batter.

Serve and Enjoy; Stack the pancakes and serve warm with syrup, fresh fruit, or whipped cream.
