Ingredients

For the Fried Rice: 4 cups cooked rice
4 eggs
1/2 cup chopped green onions
1/4 cup soy sauce (adjust to taste)
For the Stir Fried Vegetables:
6 cups assorted vegetables, chopped
1 small onion, chopped
2 tbsp freshly chopped ginger
1/4 cup soy sauce
2 tbsp oyster sauce
2 tbsp honey
1 tbsp rice vinegar
1 tbsp hoisin sauce
2 tbsp minced garlic
1 tbsp cornstarch
1 tbsp white cooking wine
1/4 cup water

Instructions

Heat your wok on the stove and add enough oil to coat it. Add the eggs and scramble them.

Add the cooked rice and chopped green onions to the wok and sauté with eggs, seasoning with soy sauce to taste. Remove from the wok and set aside.

Whisk together soy sauce, oyster sauce, honey, rice vinegar, hoisin sauce, minced garlic, cornstarch, white cooking wine, and water until well combined to create the garlic sauce. Set aside.

Add some more oil to the wok and add the chopped vegetables, stir-frying for a couple of minutes until they are tender yet crisp.

Remix the garlic sauce and pour it into the stir-fried vegetables, stirring to coat evenly and allowing the sauce to thicken.
