Egg Rolls and Ham Fried Rice

Egg Rolls with Ham Fried Rice

Here’s a delicious idea for lunch or dinner, egg rolls with ham fried rice!

Ingredients

For the Egg Rolls: 2 cups cooked ground pork
1 tbsp minced fresh ginger
3 cups shredded green cabbage
1 cup shredded carrot
2 pkgs large egg roll wrappers
Salt and pepper to taste
Oil for frying
For the Ham Fried Rice:
4 cups cooked rice
2 eggs, scrambled
1/4 cup minced onion
1 cup frozen mixed vegetables
1 cup chopped ham
2 tsp minced fresh garlic
2-3 tbsp soy sauce

Instructions

To make the egg rolls, add the cooked ground pork, freshly minced ginger, shredded green cabbage and the shredded carrot to a large bowl, mix everything together to combine. Salt and pepper to taste.

Place an egg roll wrapper on your work surface in front of you with a point facing you.

Spoon about 1/4 -1/3 cup of the ground pork mixture into the center of the egg roll wrapper. Fold the pointed end over the mixture and then fold the other two points over the middle. Roll the rest of the egg wrapper up to form a cigar shaped egg roll. I’ll wetter the edges of the egg roll with water to help it stay sealed shut.

Deep fry the egg rolls until they are golden brown. Remove and serve with soy sauce on the side.

To make the ham fried rice, cook the rice and set aside. In a large sauté pan, add enough oil to lightly coat the bottom of the pan.

To the pan, add the scrambled eggs, minced onions, mixed vegetables, chopped ham and minced garlic sautéing everything together for a couple of minutes. Add the cooked rice and gently fold everything together. Drizzle the soy sauce over the fried rice folding everything together.

Serve the fried rice with the egg rolls and enjoy!
