
Egg Boats
Be creative when making your egg boats. Use cheese, bacon or any other flavors you like to combine together. I am baking my egg boats in a baked potatoes, avocados and bell peppers. Great breakfast or brunch idea!

Ingredients
1 bell pepper
1 avocado
1 baked potato
1 cup shredded cheese
6 Oakdell eggs
For the Salsa topping:
1 cup diced bell pepper
1/2 small onion, chopped
1/4 cup freshly chopped chives
1 tomato diced
Instructions

Preheat your oven to 350 degree’s.

Slice the bell peppers, avocados and baked potato in half lengthwise. Carefully remove the seed packet from the bell peppers and using a spoon, scoop out the center of the avocado and baked potatoes enabling your to crack one or two eggs into the hollowed out center.

Place the prepared egg boats on a baking sheet and sprinkle with salt/pepper to taste.

Carefully place in the in the oven and bake for about 15 minutes or until the eggs reach the “doneness” you enjoy.

While the eggs are cooking, fold all of the salsa ingredients together, salt/pepper to taste and spoon the salsa over the baked egg boats. Serve and enjoy!
