Eclairs
Eclairs are a classic French pastry that never fails to impress! These delicate treats feature a light and airy choux pastry filled with creamy vanilla pudding (or whipped cream) and topped with a rich chocolate glaze. Perfect for special occasions or just indulging your sweet tooth, homemade éclairs bring the charm of a French patisserie straight to your kitchen.

Ingredients
1 cup water
1 stick butter
1 cup flour
pinch salt
5 large eggs
Vanilla Pudding Filling:
2 cups prepared vanilla pudding
1 cup cream, whipped (optional)
Instructions

In a large sauce pan add water, salt, and butter. Bring to a boil and make sure butter has melted.

Add flour and mix together until a large ball forms.

Remove from heat and add one egg at a time and incorporate completely.

Pipe desired shape of éclairs onto a parchment line baking sheet.

Bake in a 350 degree oven until golden brown (about 45 minutes, depending on your oven). Even the cracks should be golden, if not, when they cool they will fall. Make sure they are golden brown.

Remove and allow to cool.

To fill the eclairs, fold the whipped cream and cooled vanilla pudding together (optional).

Using a piping tip for filling eclairs, pipe the filling into the the eclairs and dip in melted chocolate coating the top of the eclairs.

Let the chocolate set, serve and enjoy.
