Easy Rice Cooker Chicken Teriyaki

Craving a delicious chicken teriyaki without the hassle? This easy rice cooker recipe requires no cooking, making it the perfect weeknight meal. Juicy chicken and flavorful teriyaki sauce come together effortlessly for a dish that will have everyone asking for seconds!

Ingredients

4 bone in, skin on chicken thighs
5 stalks green onions, chopped
2 tsp freshly grated ginger
3 garlic cloves, minced
4 tablespoons soy sauce
4 tablespoons mirin
4 tablespoons cooking sake
4 tablespoons sugar
1/4 cup water
1 tbsp cornstarch
salt and pepper to taste
Optional toppings: green onions, sesame seeds

Instructions

In a rice cooker bowl, combine chopped green onions, grated ginger, cloves, soy sauce, mirin, cooking sake, sugar, water and cornstarch. Stir until the sugar and cornstarch dissolves. Salt and pepper as needed.

Add chicken thighs, turning to coat in the sauce. When finished coating, place skin side down.

Close the lid and set the rice cooker to quick rice cooking setting or regular rice cooking mode.

Once cooked, let it rest for 5 minutes before serving.

Garnish with green onions and sesame seeds if desired and serve with cooked rice and your favorite vegetable on the side.
