Ingredients
1 cup all purpose flour
1/2 cup butter, softened
1/4 cup powdered sugar
1 cup sugar
zest of one lemon
juice from one lemon (about 2 tbsp)
1/2 tsp baking powder
2 tbsp corn starch
4 eggs
1/2 tsp salt
powdered sugar for dusting

Preheat your oven to 350°F (175°C).

In the bowl of your food processor, combine the flour, butter, and powder sugar until it resembles coarse corn meal.

Transfer the crust mixture to a greased 8x8-inch baking dish (lining with parchment paper for easy removal is recommended). Press the mixture firmly into the pan.

Bake the crust for about 20 minutes or until the edges start to brown.

While the crust is baking, whisk together the sugar, lemon zest, lemon juice, baking powder, cornstarch, eggs, and salt in a mixing bowl until well combined.

Once the crust is done, remove it from the oven and pour the lemon mixture over the hot crust. Return the pan to the oven and bake for an additional 20-25 minutes, or until the lemon custard begins to slightly brown. If the custard browns too quickly, loosely cover with aluminum foil.

Remove from the oven and let the lemon bars cool completely. Dust with powdered sugar before serving.
