Easy Breakfast Burrito

Easy Breakfast Burritos

Make several of these breakfast burritos at a time and refrigerate them for the week. Enjoy them for a quick breakfast on the go.

Ingredients

1 cup ranch dressing
1/4 cup Sriracha
4 Roma tomatoes, sliced
2 cups chopped lettuce
1 pound bacon, cooked
6-8 eggs, scrambled
Fresh tortillas or large flour tortillas
Salt and pepper to taste

Instructions

In a small bowl mix the Ranch and Sriracha together until combined. Set aside until ready to use.

Arrange the sliced tomatoes and chopped lettuce onto a large plate and set aside until ready to use.

Cook the bacon until crisp and place on a plate that is lined with a paper towel to remove any excess grease.

Scramble the eggs and set aside.

Fresh tortillas really make this dish delicious and you find them in the refrigerator section of the grocery store. Simply pan fry them until they are cooked to your liking on each side.

To assemble the burritos, place the cooked tortilla on a plate and build your burrito with the dipping sauce from step one, sliced tomatoes, lettuce, a few pieces of bacon and a spoonful of scrambled eggs. Wrap up in aluminum foil if desired, serve and enjoy!
