Easter Monte Cristo
This recipe uses delicious leftover ham from Easter or Sunday dinner for the creation of this delicious Monte Cristo sandwich. Use your favorite cheese and create and wonderful sandwich that’s perfect for lunch or dinner!
Ingredients
6 eggs
1/2 cup milk
8-10 slices bread
10-15 slices ham, I use leftover ham
10-12 slices favorite cheese
Salt and pepper to taste
Cooking spray
Instructions

Preheat your oven to 350 degree’s.

Heat a large sauté pan on the stove and spray with cooking spray.

In a large bowl whisk the eggs and milk together. Season with salt and pepper (to your liking).

Dip the bread slices in the eggs and pan fry for a couple of minutes on each side or until golden brown.

Place four or 5 french toast bread slices on a baking sheet and divide the ham and cheese slices between the slices (I used Beehive Cheese, Barely Buzzed and Red Butte Hatch Chile cheese.

Place the other french toast slice on top and place the baking sheet in the oven. Bake for about 10 minutes or until the cheese has melted.
