De-Constructed Fresh Peach Pie

De-Constructed Fresh Peach Pie

I love fresh peaches and this dessert idea is perfect for any dinner and friendly get together!

Ingredients

For the Crust: 1/2 cup cold butter
2 cups flour
1 tsp salt
1/2 cup sugar
3/4 cup cold water
For the Cream Cheese Filling: 1 package cream cheese
1 tsp almond extract
1/4 cup cream
1/2 cup sugar
For the Peach Filling:
3-4 medium size peaches
1 cup apricot jam
1/2 cup sugar
1 tbsp vanilla
1 tsp nutmeg
1/2 tsp cinnamon

Instructions

For the crust: In your food processor, combine the cold butter, flour, salt, and sugar and pulse together till it resembles coarse meal.

Add the water and pulse together until the mass comes together into a dough. Adjust the water if needed.

Roll the dough out onto a parchment paper, dock with a fork and brush with an egg wash ( 1 egg plus 1/4 cup water mix together). Sprinkle with nutmeg and cinnamon.

Roll the dough out on a floured parchment paper place on a baking sheet. Bake in a preheated 400 degree oven until golden brown (about 8 minutes). Remove from the oven and let cool. Break into pieces and set the pieces aside.

To make the cream cheese filling: Place everything into the bowl of your food processor and process until smooth. Transfer to a small bowl and set aside.

To make the peach filling: Slice the peaches into small bite-size pieces and set aside.

In a medium size pan, add the apricot jam, sugar, vanilla, nutmeg and cinnamon and gently stir everything together. While stirring, bring to a boil and remove from the heat.

Pour the apricot mixture over the sliced peach and gently fold everything together.

To assemble: Use a large glass for presentation, and add a large spoonful of the cream cheese mixture on the bottom of the glass follow by a large spoonful of the peach mixture.

Finish with a dollop of freshly whipped cream and a piece of pie crust offset into the glass. Enjoy!
