Ingredients

1 pkg frozen dumplings (about 20 dumplings; any type: pork, chicken, vegetable, etc.)
2 tablespoons vegetable oil
4 cups mixed greens (spinach, arugula, romaine, etc.)
1 cup shredded carrots
1 cup sliced cucumbers
1 cup cherry tomatoes, halved
1/2 cup thinly sliced red onions
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh mint
1/4 cup chopped fresh basil
1/4 cup chopped green onions
For the Dressing: 1/4 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon sesame oil
1 tablespoon honey
1 garlic clove, minced
1 teaspoon grated fresh ginger
1 tablespoon lime juice
1 teaspoon chili flakes (optional, for a spicy kick)

Instructions

1
Cook the Dumplings: Heat the vegetable oil in a large skillet over medium-high heat. Add the frozen dumplings to the skillet, arranging them in a single layer. Cook the dumplings according to the package instructions until they are golden brown and crispy on the bottom, and fully cooked through. This usually takes about 8-10 minutes. Once cooked, remove the dumplings from the skillet and let them cool slightly.
2
Prepare the Salad: In a large bowl, combine the mixed greens, shredded carrots, sliced cucumbers, cherry tomatoes, red onions, cilantro, mint, basil, and green onions.
3
Make the Dressing: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, minced garlic, grated ginger, lime juice, and chili flakes (if using) until well combined.
4
Assemble the Salad: Drizzle the dressing over the mixed salad greens and toss gently to combine. Arrange the cooked dumplings on top of the salad. Serve immediately, garnished with additional herbs or a sprinkle of sesame seeds if desired.
5
Optional toppings could be candied walnuts, dried fruit like cranberries or cherries and shredded parmesan cheese.
