Creamy Garlic Parmesan Risotto
Creamy and delicious, risotto is a wonderful side dish with dinner. I like to add mushrooms in mine, but be creative and customize it to your meal!

Ingredients
4 tbsp butter
4 garlic cloves, minced
1/3 cup finely chopped onion
1 cup sliced mushrooms
1 cup Arborio rice
4 cups chicken stock
1 cup Parmesan cheese
1 cup finely chopped parsley
1 cup peas
Salt and pepper to taste
Instructions

Heat a large frying pan on the stove and add the butter allowing it to melt.

Add the minced garlic, chopped onion and sliced mushrooms to the pan and sauté for a couple of minutes in the butter.

Add the arborio rice and sauté the rice in the butter mixture for about 2 minutes.

Add 1/2 cup at a time of the chicken stock stirring the rice while it heats and absorbs the liquid. Continue adding the chicken stock 1/2 cup at a time until all of the liquid has been incorporated.

Stir in the parmesan cheese, chopped parsley and peas. Salt and pepper to taste, serve with your favorite dinner and enjoy!
