Creamy Chorizo & Chicken Pasta

If you’re looking for a restaurant-quality meal you can make at home, this Creamy Chorizo & Chicken Pasta is the perfect choice! Ingredients

For the Pasta: 10 oz pasta (penne or fettuccine)

1 tbsp salt (for boiling water)

For the Sauce: 1 tbsp olive oil

6 oz chorizo, sliced

2 boneless, skinless chicken breasts, diced

3 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped

1 tsp smoked paprika

1/2 tsp red pepper flakes (optional)

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

Salt and black pepper, to taste

1/4 cup fresh basil, chopped


Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Cook the Chorizo & Chicken: Heat olive oil in a large skillet over medium heat. Add sliced chorizo and cook for 3 minutes, stirring occasionally, until crispy. Remove from the pan and set aside.

In the same skillet, add diced chicken, season with salt and pepper, and cook until golden brown and fully cooked, about 5-6 minutes. Remove and set aside.

Prepare the Sauce: In the same skillet, add garlic, sun-dried tomatoes, smoked paprika, and red pepper flakes. Sauté for 1 minute until fragrant.

Pour in the chicken broth and heavy cream, stirring well to combine. Let it simmer for 2 minutes.

Stir in Parmesan cheese and cook until fully melted and the sauce thickens.

Combine & Serve: Add the cooked pasta, chicken, and chorizo back into the skillet. Toss to coat everything in the creamy sauce. Adjust seasoning if needed. Sprinkle fresh basil on top and serve hot!
