Creamy Chicken Toast
As a child, my great grandma Goff would make similar cream dishes for me while I was staying with her. Here’s a version of a childhood favorite of mine.
Ingredients
2 chicken breasts
1 cup diced bell pepper
1 cup chopped celery
1 cup diced onion
2 cups heavy cream
1 tbsp dried tarragon
2 tsp ground pepper
1 tsp salt
1 tsp red cayenne pepper
1 cup chopped tomatoes
1/2 cup chopped green onion
1/2 cup chopped parsley
Favorite toast
Salt and pepper to taste
Vegetable oil
Instructions

Heat a large saute pan on the stove and add enough oil to lightly coat the bottom of the pan.

Salt and pepper the two chicken breasts and pan sear them until they are fully cooked through. Remove from the pan and dice the cooked chicken breast in about 1/2 inch cubes.

Add the diced bell pepper, celery and onion to the pan and saute until tender. Add the cream, dried tarragon, ground pepper, salt, red cayenne pepper and diced cooked chicken. While stirring, reduce the cream by 1/2 to create the cream sauce.

Toast your favorite bread (I used leftover Rhodes Bake and Serve rolls from New Years Day). If you’re not a toast fan, sever over rice, pasta or your favorite starch.

Garnish with chopped tomatoes, green onions and parsley. Enjoy!
