
Creamy Avocado-Bacon Chopped Salad Sandwich
Elevate your sandwich game with this delightful combination. We’re starting with three unique homemade mayonnaise flavors – chipotle, lemon-herb, and roasted garlic. Then, we’ll use one of these, the creamy avocado-bacon chopped salad, to craft a sandwich that’s bursting with freshness and flavor. This chopped salad sandwich is perfect for a satisfying lunch or light dinner.

Ingredients
mayonnaise, see below instructions
avocado, diced
6 slices bacon, cooked and chopped
1 cup chopped romaine lettuce
1/2 cup diced celery
1/4 cup chopped red onion
1/4 fresh chopped dill
1/4 cup lemon-herb mayonnaise, see below

Instructions

Basic Mayonnaise: 1 large egg, 1 tbsp lemon juice, 1 tsp Dijon mustard, 1 cup neutral oil (like avocado or canola), salt and pepper to taste. In a bowl, whisk together egg yolk, lemon juice, and Dijon mustard. Slowly drizzle in oil while whisking continuously until emulsified. Season with salt and pepper. I like to use my immersion blender making this mayonnaise.

Lemon-Herb Mayonnaise: 1/4 cup basic mayonnaise, 1 tbsp chopped fresh herbs (parsley, dill, chives), 1 tsp lemon zest or any kind of flavors you choose, simple combine and mix together with the amount of basic mayonnaise needed.

Chipotle Mayonnaise: 1/4 cup basic mayonnaise, 1-2 chipotle peppers in adobo sauce, minced. Mix everything together.
Roasted Garlic Mayonnaise: 1/4 cup basic mayonnaise, 2 cloves roasted garlic, mashed. Mix everything together to combine.

Chopped Salad: In a bowl, combine avocado, bacon, romaine lettuce, celery, red onion, and dill. Mix in lemon-herb mayonnaise.

Assemble Sandwich: Spread chopped salad on bread slices. Serve with chips or your favorite side.
