Cream of Mushroom Soup with Wild Rice
Warm, hearty and delicious, this cream of mushroom soup with wild rice is a wonderful option for dinner.
Ingredients
1/3 cup olive oil
1 cup chopped onion
2 tbsp garlic
6-8 cups sliced mushrooms
1 cup wild rice
1/2 cup flour (more if needed)
4 cups chicken stock
4 cups beef stock
2 cups cream
1 tbsp dried thyme
1/3 cup freshly chopped parsley
Instructions

Heat a large pot on the stove and add the olive oil, chopped onions and garlic. Saute together for about 5 minutes or until very fragrant.

Add the sliced mushrooms and wild rice; continue sautéing for an additional 5 minutes. Add the flour and mix everything together to incorporate the flour.

Add the stocks, stir everything together and let the soup come to a boil, reduce the heat and simmer for 10 minutes.

Stir in the cream, thyme and fresh parsley simmering for an additional 5 minutes. Serve with your favorite Rhodes rolls on the side.
