Cranberry Orange Scones
I enjoyed some cranberry and orange scones from Costco and decided I had to create a recipe for everyone to enjoy.
Ingredients
4 cups self rising flour
1/2 cup brown sugar
1 tsp salt
zest of one large orange
1/2 cup butter, cut into pieces
2 cups craisins
1 1/2 cups butter milk
2 eggs
Glaze:
2 cups powdered sugar
juice from one orange

Preheat your oven to 350 degrees.

To make the scone dough add the self-rising flour, brown sugar, salt and orange zest into your food processor and pulse together to combine the orange zest into the dry ingredients.

Add the butter to the food processor and pulse to cut the butter into the dry ingredients. Continue pulsing until it resembles course meal.

Transfer the dry ingredients to a large bowl and add the craisins, buttermilk and eggs. Using a wooden spoon, mix together until combined.

Line a baking sheet with parchment paper and spray with vegetable spray.

Spoon large spoonfuls onto your prepared baking sheet (about 1/3 cup portions). I portioned 12 to a baking sheet with an extra 4 on another baking sheet. You portion as small or large a portion as you need for your use.

Place the scones into your preheated oven and bake for approximately 20 minutes or until golden brown.

When they are golden brown, remove from the oven and make the glaze by combine the powdered juice and juice from the orange you zested.

Mix the glaze together until it combines. If desired, adjust the consistency of the glaze by adding a little more orange juice and powdered sugar.

Drizzle (or spread, depending on the glaze consistency) the prepared glaze over the scones, serve and enjoy!
