Cowboy-Style Flatiron Steak with Roasted Vegetables

The star of the show is a tender flatiron steak, generously coated in a smoky cowboy rub made with chili powder, smoked paprika, and a kiss of brown sugar. It’s seared to perfection and served alongside hearty, caramelized seasonal vegetables like carrots, baby potatoes, and bell peppers—making it a wholesome and colorful weeknight dinner.

Ingredients

For the Cowboy Rub: 1 tbsp chili powder

2 tsp smoked paprika

1 tsp brown sugar

1 tsp garlic powder

½ tsp onion powder

½ tsp ground cumin

½ tsp crushed black pepper

½ tsp salt

For the Steak and Veggies: 1½ lb flatiron steak

1 tbsp olive oil

4 medium carrots, peeled and cut into sticks

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 small red onion, cut into wedges

1½ cups baby potatoes, halved

1 tbsp fresh rosemary, chopped

1 tbsp fresh thyme leaves

Salt and pepper, to taste


Instructions

1. Preheat oven to 425°F (220°C). Line a sheet pan with parchment paper.

Make the Cowboy Rub
: In a small bowl, mix chili powder, smoked paprika, brown sugar, garlic powder, onion powder, cumin, pepper, and salt.

3. Season the Steak
: Rub both sides of the flatiron steak generously with the cowboy rub. Let it sit at room temperature while you prep the veggies.

4. Prep the Vegetables: 
Toss the carrots, bell peppers, onion, and baby potatoes with olive oil, rosemary, thyme, salt, and pepper. Spread them evenly on the sheet pan.

5. Roast the Veggies: 
Roast vegetables for 25 minutes, turning once halfway through if needed, until tender and golden brown.

6. Cook the Steak: 
While veggies roast, heat a grill pan or cast-iron skillet over medium-high heat. Sear the steak for 4–5 minutes per side for medium-rare, or adjust for desired doneness. Let rest 5 minutes, then slice against the grain.

Plate sliced steak over the roasted veggies. Garnish with fresh herbs if desired.
