Looking for a classic dinner that’s easy to make? My country style pork chops are so easy to cook up for dinner that from start to finish you could have a delicious dinner on the table in under an hour!

Ingredients

4 bone in pork chops
4 russet potatoes, peeled and chopped
4 cups assorted root vegetables peeled and sliced
1 large onion, sliced
4 tbsp butter
4 tbsp flour
4 cups chicken broth
Season salt
Black Pepper
Olive oil

Instructions

1
Season the pork chops with your favorite season salt and pepper, set aside.
2
Add the peeled and chopped potatoes to a large pot and cover with cold water. Bring to a boil and simmer until the potatoes are fork tender (about 15 minutes). Drain, mash, season and set aside.
3
Heat a large sauté pan on the stove and add enough olive oil to lightly coat the bottom of pan. Sauté the vegetables until tender, season with season salt and pepper. Set aside.
4
In the same saute pan, pan sear the seasoned pork chops for 3-4 minutes on each side or until the pork reaches 145 degree’s internally. Remove from the pan and set aside.
5
Add the butter to the saute pan and melt. Stir in the flour until incorporated in the butter. Whisk the chicken stock into the roux and bring to a boil. Reduce to a simmer and cook for 5 minutes.
6
Serve the mashed potatoes, gravy, sautéed vegetables and pan seared pork chops for a great dinner!
