Buttermilk Pancakes with Coconut Pineapple Syrup

Coconut Pineapple Syrup

Delicious coconut/pineapple syrup is a great idea for any pancakes or waffles.

Ingredients

1 can coconut cream (about 13-14 ounce can)
1 cup drained pineapple
1 1/2 cups sugar
1/2 tsp salt

Instructions

Combine the coconut cream and the drained pineapple in the blender and blend together.

To a sauce pan, add the combine coconut cream/pineapple mixture to the sugar, stir to combine and bring to a boil. Remove from the heat and set aside until ready to use. Enjoy!
