Coconut Lime Shrimp Tacos with Pineapple Slaw

Take your taste buds on a tropical getaway with these Coconut Lime Shrimp Tacos with Pineapple Slaw! Juicy shrimp are marinated in coconut and lime, then grilled to perfection and served with a vibrant pineapple slaw for the ultimate flavor explosion.

Ingredients

For the Shrimp: 1 lb shrimp, peeled & deveined
½ cup coconut milk
Juice & zest of 1 lime
1 tbsp olive oil
1 tsp honey
½ tsp chili powder
½ tsp salt
For the Pineapple Slaw: 1 cup shredded cabbage (red or green)
½ cup fresh pineapple, diced
¼ cup shredded carrots
2 tbsp chopped cilantro
Juice of ½ lime
1 tbsp honey
1 tbsp Greek yogurt or mayo
Salt & pepper, to taste
For the Tacos: 8 corn tortillas
½ cup sour cream
1 tbsp lime juice
½ tsp garlic powder
½ avocado, mashed (optional)
Toasted coconut flakes, for garnish

Instructions

Marinate the Shrimp: In a bowl, whisk together coconut milk, lime juice, zest, olive oil, honey, chili powder, and salt. Add shrimp and marinate for 15-20 minutes.

Make the Slaw: In a large bowl, combine cabbage, pineapple, carrots, and cilantro. Whisk together lime juice, honey, and yogurt, then toss with the slaw. Season with salt and pepper.

Cook the Shrimp: Heat a skillet or grill pan over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and slightly charred.

Prepare the Sauce: Mix sour cream, lime juice, and garlic powder.

Assemble the Tacos: Warm tortillas, then layer with pineapple slaw, shrimp, a drizzle of sauce, and optional mashed avocado. Sprinkle with toasted coconut.
