Coconut Curry Chicken & Rice

Ingredients

For the Curry: 2 tbsp olive oil

1 lb boneless, skinless chicken breasts (cubed)

1 small onion (diced)

3 cloves garlic (minced)

1 red bell pepper (sliced)

1 yellow bell pepper (sliced)

1 tbsp curry powder

1 tsp ground turmeric

1 tsp ground cumin

1/2 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

1 (13.5 oz) can coconut milk

1 cup chicken broth

1 tbsp soy sauce

1 tbsp lime juice

1 tsp honey (optional)

1/4 cup chopped cilantro (for garnish)

For the Rice: 1 cup jasmine rice

2 cups water

1/2 tsp salt


Instructions

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear.
 In a medium pot, combine the rice, water, and salt.
 Bring to a boil, then reduce heat to low. Cover and let simmer for 15 minutes.
 Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.

Make the Coconut Curry Chicken: Heat olive oil in a large skillet over medium heat.
 Add the cubed chicken and cook until browned, about 5 minutes. Remove and set aside.
 In the same skillet, add onion, garlic, and bell peppers. Sauté for 3 minutes until fragrant.
 Stir in curry powder, turmeric, cumin, paprika, salt, and black pepper. Cook for 1 minute.
 Pour in coconut milk, chicken broth, soy sauce, lime juice, and honey (if using). Stir well.
 Return the chicken to the skillet and let simmer for 10-15 minutes, until the sauce thickens slightly.
 Garnish with chopped cilantro and serve over rice.
