
Cloudy with a Chance of Avocado
This delicious recipe is a great idea for brunch or a weekend breakfast. Light and fluffy, this dish is like biting into a cloud.

Ingredients
4 Oakdell eggs, separated
1 avocado
2 slices of bread
1 tbsp lemon juice
Salt and pepper to taste
Instructions

Preheat your oven to 400 degrees. Line a baking pan with a Silpat and set aside.

Whip the egg whites with the lemon juice to stiff peaks and add enough salt and pepper to taste.

Build two “clouds” of egg whites on the Silpat with a small indentation on the top for the egg yolks. Place in the pre-heated oven and bake for 10 minutes.

Remove the clouds from the oven and gently place the egg yolks in the indentations on top and place back in the oven for another 10 minutes.

While the “clouds” are baking, toast the bread and divide the avocado flesh between the two pieces of toast.

Remove the “clouds” from the oven and using a spatula, transfer the “clouds” and place on the avocado toast. Serve and enjoy!
