Classic Potato Leek Soup

Classic Potato Leek Soup

This Potato Leek Soup is a classic, hearty soup perfect for colder days. Made with simple ingredients like potatoes, leeks, and garlic, this soup is creamy, flavorful, and easy to make. In under an hour, you can enjoy a comforting, homemade soup that warms you from the inside out. I like putting a dollop of my fresh pomegranate salsa on top.

Ingredients

4 large leeks, trimmed, cleaned, and sliced
4 medium Green Giant Gold potatoes, peeled and diced
4 cups vegetable broth
1 cup milk or cream (optional for extra creaminess)
2 tbsp butter or olive oil
1 tsp salt
1/2 tsp black pepper
Fresh chives, chopped (for garnish)

Instructions

In a large pot, melt the butter or heat olive oil over medium heat. Add the sliced leeks and cook until soft, about 5 minutes.

Add the diced potatoes to the pot, stirring to combine with the leeks.

Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to a simmer and cook for 20-25 minutes, or until the potatoes are tender.

Use an immersion blender to blend the soup until smooth, or transfer in batches to a blender.

Stir in milk or cream, if desired, and season with salt and black pepper.

Serve hot, garnished with fresh chives and a dollop of my fresh pomegranate salsa.
