Classic Pan Gravy for Steak
This simple pan gravy is the perfect addition to a steak dinner. Starting with the savory flavors left in the pan after searing your steak, you’ll create a roux and whisk in beef stock for a rich, smooth gravy that’s full of flavor. Perfect for drizzling over your steak and side dishes!
Ingredients
2 tbsp steak drippings or unsalted butter
2 tbsp all-purpose flour
1 ½ cups beef stock
Salt and pepper, to taste

Sear the Steak: Start by pan-searing your steak in a hot skillet. Once the steak is done, set it aside, leaving the drippings in the pan.

Make the Roux: Add 2 tablespoons of steak drippings (or butter if needed) to the pan. Sprinkle in 2 tablespoons of flour and whisk constantly over medium heat until the mixture turns golden brown, about 2-3 minutes.

Whisk in the Stock: Gradually pour in the beef stock while continuing to whisk, ensuring the roux and stock blend smoothly. Bring the mixture to a gentle simmer and cook for another 2-3 minutes, or until it thickens to your liking.
