Chocolate Avocado-Chia Pudding
Creamy avocado and chia seeds add a healthy boost to this delicious pudding dessert. This recipe is courtesy of The American Heart Association.
Ingredients
2 medium rip avocados, peeled and pitted
1/2 cup unsweetened almond milk
1/4 cup unsweetened Dutch-process cocoa powder
1/4 cup fat-free plain Greek yogurt
3 Medjool dates, pitted
1 tsp vanilla extract
2 tbsp chia seeds
1/4 cup plus 2 tbsp unsalted chopped almonds or walnuts, optional

In the bowl of your food processor, combine all ingredients together pureeing everything together.

Transfer the mixture to your serving dishes and refrigerate covered for about 1 hour to thicken. Just before serving, sprinkle with toasted nuts if desired, serve and enjoy!
