
Chinese Chopped Salad
Chopped salads are a great way to get your vegetables and they are so versatile. This chopped salad has a Chinese flair but can easily be adapted to meet your needs. I like to serve this salad with my freshly made sesame ginger dressing.

Ingredients
1 chicken breast, fully cook and chopped
4 cups chopped lettuce
1 bell pepper, cored and chopped
1 can mandarin oranges (11 oz, drained)
1 can kidney beans (15.5 oz, drained)
1/2 cup freshly chopped chives
3 celery stalks, chopped
1 cup chopped cooked green beans
1/2 cup hemp seeds
1 small red onion, sliced
1 cup frozen peas, thawed
2 cups chopped broccoli
1 pkg ramón noodles, crushed
Instructions

Add all of the chopped salad ingredients into a large bowl and toss to combine.
