Chinese Chicken Salad
I love the dressing for this salad and serve it often. Change out the chicken, if desired, and customize this amazing salad to your liking.
Ingredients
For the Salad:
2 cups cooked chicken
6 cups salad greens
1 can mandarin oranges
4 cups fried wontons
For the dressing:
1/4 cup vegetable oil
2 tbsp soy sauce
1 tbsp brown sugar
1 tbsp sesame seed oil
2 tbsp rice vinegar
1 tsp yellow mustard
1/2 tsp ground ginger
1/2 tsp garlic powder
2 tbsp sesame seeds
Instructions

To make the salad, cook the chicken, cool and chop it up into bitesize pieces. Add the chicken to a large mixing bowl.

Add the salad greens to the chicken along with the mandarin orange slices. Gently toss to combine everything.

To fry the wontons, heat a large sauté pan with about 1/2 inch vegetable oil. Using wonton skins, slices them into lengthwise slices and fry until golden brown. Remove from the oil and drain on a plate lined with paper towels to absorb excess oil. Set aside until ready to use

To make the dressing, combine the dressing ingredients in a mixing bowl and whisk to combine.

Portion the salad greens onto four plates, drizzle with dressing and top with the fried wontons. Enjoy!
