Chilaquiles Burritos

Chilaquiles Burritos

Quick, easy and delicious, these chilaquiles burritos are a winner with family and friends. I like to use fresh chips and homemade salsa to make my chilaquiles over the top incredible!

Ingredients

6-8 cups fresh corn tortilla chips
6-8 roma tomatoes
1 small onion, quartered
1 tbsp freshly minced garlic
1 tbsp cumin
1 tbsp salt
1 tbsp black pepper
1 tbsp prepared hot sauce
4-6 eggs, fried
2 avocados
4 cups cooked rice
Fresh lime juice to taste
2 cups prepared re-fried beans
Flour tortillas
Mexican cheese

Instructions

Set the tortilla chips aside until ready to use.

In a blender, add the tomatoes, cilantro, onion, garlic, cumin salt, pepper and prepared hot sauce. Blend everything together until well blended.

Pour the sauce into your frying pan and crack the eggs into the sauce, cover and cook the eggs until desired doneness is reached.

Using a slotted spoon, carefully remove the eggs and set the on a plate.

Add the corn tortillas to the frying pan with the salsa, carefully mix to coat the chips with the salsa.

Place a large flour tortilla on your plate, spoon some re-fried beans and rice on the tortilla followed by the prepared chips. Top with a cooked egg, sliced avocado, dollop of sour cream (if desired) and squeeze of fresh lime juice. Roll up like a burrito and serve.
