Chickpea Salad Sandwich

Chickpea Salad Sandwich

I love sandwiches because they are so versatile and easy to create. Try mashing up chickpeas and mixing them with your favorite salad ingredients is the delicious idea!

Ingredients

1 can chickpeas (15.5 oz can), drained and rinsed
1 can chickpeas, drained and rinsed
1/4 cup roasted sun flower seeds
1/4 cup cup diced red onion
1/4 cup diced red bell pepper
1/4 cup diced dill pickles
2 tbsp freshly chopped dill
1/4 cup freshly chopped chives
Salt and pepper to taste
Whole wheat sandwich bread

Instructions

Add the chickpeas to the bowl of a food processor and pulse to finely chop the chickpeas. Remove from the food processor and transfer to a large mixing bowl.

Add the mayo or tahini sauce along with the roasted sun flower seeds, diced red onion, bell pepper, dill pickles, chopped dill and chives to the bowl. Gently mix everything together to combine. Add salt and pepper to taste and set aside. If desired, add chopped tomatoes too.

Toast two slices of whole wheat bread and spread the chickpea salad spread over the toast. Place the two toasted slices of bread together creating a sandwich and serve with your favorite sides. Enjoy!
