Chicken Tostadas with Fresh Corn Tortillas

Wanna make an amazing dinner? These chicken tostadas with freshly made corn tortillas are the best. You can make or buy your tortillas and assemble this wonderful dinner idea in a snap!

Ingredients

1 1/4 cups Maseca
1 1/2 cups water
2 tsp salt
4 cups shredded chicken
2 cups re-fried beans
2 cups shredded lettuce
1 cup fresh salsa
1 cup shredded cheese
1/2 cup sour cream

Instructions

To make the corn tortillas, combine the Maseca, water and salt together and using your hand knead together for 5 minutes. Cover and let the dough rest for 20 minutes.

Divide the dough into about 7-8 golf ball size pieces and using a tortilla press flatten the pieces into tortillas. I use two plastic sheets sprayed with vegetable spray to prevent the fresh tortilla from sticking.

If you don’t have a tortilla press, simply flatten the dough by pressing it under a heavy pan or cutting board.

Heat a griddle up to medium heat and cook for about 1 1/2 minutes on each side. Remove from the griddle and fry the fresh tortillas to crisp them up for tostadas.

To build the tostadas, spread some warm re-fried beans, cooked shredded chicken, chopped lettuce, fresh salsa and finish with a dollop of sour cream and shredded cheese.
