Chicken Tortilla Soup
Warm the hearts of your family and friends with this delicious chicken tortilla soup. Bake your own tortilla strips and top with your favorite ingredients and enjoy!
Ingredients
2 chicken breasts, grilled and chopped
2 tsp chili powder
2 tsp cumin
1 cup fresh or frozen corn
1 medium onion, diced
1 tbsp minced garlic
4-5 chopped tomatoes
6 cups chicken stock
zest and juice from one lime
1 avocado, diced
Tortilla strips, baked
Cheese for garnish
Olive oil
Salt and pepper to taste
Instructions

Preheat the oven to 400 degree’s.

Heat a large pot on the stove and add enough olive oil to lightly coat the bottom of the pan.

Add the chicken breast, chili powder, cumin, onion, garlic, and tomatoes to the pot and gently stir and sauté ingredients for about 5 minutes.

Add the chicken stock and bring the soup to a boil. Reduce the heat to a simmer and simmer for about 10 minutes.

While the soup is simmering, slice the corn tortillas into thin slices and place them on a baking sheet and lightly spray with vegetable spray.

Place the tortilla strips in the oven and bake until crispy and golden brown.

Add the zest and lime juice to the soup and serve with tortilla strips, avocado and cheese. Enjoy!
