Chicken Tinga Tacos or Tostadas
These chicken tinga tacos/tostadas are simple and delicious. Perfect for an afternoon snack or a quick and easy dinner idea for the whole family.
Ingredients
1 onion, diced
1 tbsp garlic
4 cups cooked and shredded chicken
1 cup fresh pico de gallo
1 adobo pepper
Chopped iceberg lettuce
Sour cream
Corn Tortillas
Oil for frying
Salt and pepper to taste
Instructions

Heat a large sauté pan on the stove and add enough oil to lightly coat the bottom of the pan.

Sauté the onions and garlic until fragrant. Add the shredded chicken and combine.

Puree the fresh pico de gallo and adobo pepper together into a sauce and add to the shredded chicken. Bring to a simmer and cook for about 5 minutes. Salt and pepper to taste.

Fry the corn tortillas into tostadas and set aside.

To assemble, place some of the shredded chicken mixture on top of the tostado along with the shredded lettuce and sour cream. Salt and pepper to taste, serve with your favorite beverage and enjoy.
