Chicken Tinga Tacos
This delicious chicken dish that’s been stewed in a spicy tomato sauce is a wonderful taco filling. Made popular in the Puebla region of Mexico, you can use it on tostadas or sopas too.
Ingredients
For the Sauce:
1 medium onion, sliced
2 tbsp minced garlic
2 tsp dried oregano
1 can tomato paste
2 cups water or chicken broth
2 chipotle chilies
2 tbsp adobo sauce
For the Tacos:
4 chicken breasts, cooked and shredded
2 bay leaf
Corn Tortillas
3-4 limes, cut into wedges
Fresh Salsa
Olive oil
Instructions

Heat a large sauté pan on the stove and add enough olive oil to lightly coat the bottom of the pan.

Add the onions to the sauté pan and caramelize. Add the minced garlic and oregano, sauté everything together.

Transfer the onion mixture to your blender along with the tomato paste, water or chicken broth, chipotle chilies and adobo sauce, blend everything together until smooth.

Pour the sauce back into the sauté pan and add the shredded chicken and bay leaf. Simmer for 5 minutes.

To assemble the chicken tinga tacos, add some of the shredded chicken and sauce to a corn tortilla with a spoonful of fresh salsa. Serve and enjoy!
