Chicken Skillet Pasta

Chicken Skillet Pasta

Heres a delicious skillet dinner idea that easy to make! Sautéed chicken and vegetables are always a great idea for dinner!

Ingredients

2 chicken breasts, cubed
1 small yellow onion, diced
1 tbsp minced garlic
1 small zucchini, sliced
3 1/2 cups chicken stock
1 - 12 oz package tri-color rotini pasta
1 cup cherry tomatoes
1 cup shredded mozzarella cheese
1/4 cup thinly slice basil (more or less)
1/4 cup grated parmesan cheese
Olive oil
Salt and pepper to taste

Instructions

Heat a large skillet on the stove and add enough olive oil to lightly coat the bottom of the pan.

Add the cubed chicken to the pan and fully cook. Salt and pepper to taste. Remove the chicken to a plate.

If needed, add additional olive oil to the pan and add the onion, garlic and zucchini cooking until it’s tender. Remove the vegetables and place them with the chicken.

Add the chicken stock to the pan and bring to a boil. Add the pasta and cook until it’s al dente. You may have to stir occasionally to keep it from sticking.

Add the chicken, sautéed vegetables, cherry tomatoes and the mozzarella cheese. Stir everything together to combined. Sprinkle with grated parmesan cheese, serve and enjoy!
