Chicken Salad Sandwich with Fresh Potato Chips
I love chicken salad on freshly baked rolls and chips. This delicious meal is a great idea for lunch or dinner.
Ingredients
1 tbsp pickled jalapeños
1/4 cup dill pickle chips
4 garlic cloves, minced
1/2 cup mayonnaise
4 washed russet potatoes

Salt and pepper to taste
Instructions

In the bowl of your food processor with the blade attachment, add the pickled jalapeños, dill pickle chips and minced garlic cloves, pulsing everything together until finely chopped.

Switch the blade to the dough blade and add the chicken breasts (chop them up a bit before adding them).

Pulse the food processor and shred the chicken. Remove the chicken mixture to a large bowl and fold in the mayonnaise. Salt and pepper to taste.

Heat a large pot of oil (about 2 inches) to 370 degrees Fahrenheit.

Thinly slice the potatoes to and fry them until they are golden and crispy. Remove from the oil, salt and enjoy.

Serve the chicken salad on the freshly baked Rhodes dinner roll and fresh potato chips on the side. Enjoy!
