
Chicken Poppy Seed Casserole
My sister-in-law, Janette, introduced this yummy casserole to me many years ago. To this day, it is a favorite of mine and I always love when she makes it!

Ingredients
3 chicken breasts, cooked and cut into pieces
3 medium Klondike Gold potatoes
1 pkg frozen mixed vegetables (12 oz)
2 cups sour cream
1 cup milk
1/4 cup flour
8 tbsp butter
1 cup sharp cheddar cheese
1/4 cup poppy seeds
1 chicken bullion cube
1 tbsp dried dill
1/4 tsp cayenne pepper
salt and pepper to taste
Instructions

Cube the Klondike gold potatoes and add them to a large mixing bowl.

Add the remaining ingredients into the mixing bowl and mix everything together until combined.

Spray a 9x13 baking pan with vegetable spray and transfer the chicken mixture to the baking pan.

Spread the mixture evening into the prepared pan.

Bake in your preheated 350 degree oven for about 30 minutes or until the casserole is bubbling and it has browned up on top.

Remove from the oven and let it sit for 10 minutes before serving. Serve with your favorite salad on the side and enjoy!
