Chicken Piccata

Chicken Piccata

Chicken piccata is simple and always delicious. Serve with garden fresh vegetables and enjoy!

Ingredients

8 oz package angel hair pasta
1/4 tsp black pepper
2 tbsp whole wheat flour
2 boneless, skinless chicken breasts butterflied (fat discarded)
1/2 cup low-sodium chicken stock
2 tsp minced garlic
1 tbsp Italian herb blend
1 1/2 cup sliced, fresh mushrooms
2 medium zucchini, thinly sliced
Vegetable Spray

Instructions

Prepare pasta as directed on the package, drain, rinse and set aside.

Mix the flour and black pepper together dredging the prepared chicken breasts coating both sides.

Heat a large saute pan and spray with vegetable spray. Cook the chicken for about 4-5 minutes on each side or until it is fully cooked. Remove from the pan and set aside.

Re-spray the skillet and add the mushrooms. Saute for about 3-4 minutes while stirring.

Add the Italian seasoning and zucchini. continue cooking for about 3 minutes or until the zucchini is soft.

Toss the prepared pasta in the sauce and serve the chicken. Enjoy!
