Chicken Noodle Soup with Homemade Noodles

Easy to make and delicious to eat, this chicken noodle soup with homemade noodles will be a crowd favorite!

Ingredients

For the Soup: 2 chicken breasts, cut into pieces
6 cups chicken stock
4 celery stalks, diced
4 carrots, peeled, diced
2 medium onions, diced
1 tbsp salt
3 bay leaves
1 tbsp dried basil
Homemade Noodles: 2 cups all purpose flour
2 eggs
1 tsp salt
1-2 tbsp water

Instructions

To make the Soup: Place the chicken pieces and chicken stock in your pressure cooker and pressure cook for 30 minutes.

Release the pressure from your pressure cooker as directed by the manufacturer of your pressure cooker.

Add the remaining ingredients and simmer for about 15 minutes or until the vegetables are tender.

Meanwhile bring a large pot of water to a boil and add the homemade noodles to the boiling water and boil the waters for about 5 minutes or until they fully float to the top of the pot.

Add the cooked noodles to bowls and ladle the soup over the noodles. Serve and enjoy!

To make the Noodles: Add all of the ingredients into your food processor with the blade attachment.

Pulse everything together pulling the mass into a dough. If needed, add an additional tbsp of water.

Remove the dough and let it rest for ten minutes. Roll the dough out to about 1/16 of an inch thick and cut them in 1/4 inch noodle strips.

Bring a large pot of water to a boil and boil the noodles for about 5 minutes or until they fully float on top of the water.

Add the noodles to your soup bowls and ladle the soup over the noodles. Serve and enjoy with your favorite artisan bread!

I like to pressure cook a whole chicken in about 4 cups of water for 40-45 minutes. Let the pressure release naturally, cool and pick the meat off of the chicken, reserving the stock for the soup. Try adding about 2 cups of fresh pico de gallo in your soup for an extra zesty variation .
