Chicken Noodle Soup
I love chicken noodle soup and there is no reason you shouldn’t be making it from scratch. Pressure cookers are great in speeding up the process of making homemade soups. Use a whole roaster chicken to ensure the best stock flavor too. If using a slow cooker, simply use chopped up chicken breasts.
Ingredients
1 whole roaster chicken
2 large onions, sliced
1 tbsp minced garlic
4 cups sliced celery
4 cups sliced carrots
2 cups chopped broccoli
2 tbsp chicken bullion
sprig of thyme and rosemary
1 package fettuccine noodles
olive oil
salt and pepper to taste
artisan bread

I like to make this is my pressure cooker, however, you can easily do this in a large pot too.

Place the whole roaster chicken in your pressure cooker and cover with cold water. Be sure the pressure cooker is large enough to handle the roaster chicken. If in question, refer to your owners manual for reference.

If making this in a large pot, place the roaster chicken in a large pot and cover with cold water.

Secure the pressure cooker lid in place and pressure cook for about 45 minutes or until the chicken is fall apart tender. This would be the same process in a large pot but it would need to simmer for about 3 hours or until the chicken is fall apart tender.

Once the chicken is cooked, strain reserving the stock and remove the meat from the chicken.

Heat a large pot on the stove and add enough oil to lightly coat the bottom of the pot.

Add the onions, garlic, celery, carrots, and broccoli. Sauté until fragrant, about 10 minutes.

Add the chicken stock, chicken meat, chicken bullion, sprigs of thyme and rosemary. Bring to a boil, reduce heat and simmer for 10 minutes.

Add the fettuccine noodles to the soup and continue simmering for about 7-10 minutes or until the noodles are cooked through. Salt and pepper to taste.

Serve your homemade chicken noodle soup with artisan bread and enjoy!
Says to add chicken stock but it is not listed in the Ingredients (8) nor the amount?
Hi, by chicken stock do you mean the bullion? If so, that is listed in step 8. If referring to the “reserve the chicken stock” that is the liquid the chicken has been cooking in. Hope this helps and let me know if you have any other questions.
