Chicken Lo Mein
I love chicken lo mein and it’s so easy to make at home!
Ingredients
For velveting the Chicken:
2 chicken breasts, thinly sliced
2 egg whites
2 tbsp cornstarch
For the Sauce:
1/4 cup soy sauce
1 tbsp sesame seed oil
2 tbsp sesame seed
1 tbsp granulated garlic
1 tbsp powdered ginger
1/4 cup sugar
1 tbsp sriracha
For the noodles:
8 ounces uncooked lo mein noodles
2 cups blanched cauliflower florets
2 cups kale salad mix

Whisk the egg whites and cornstarch in a mixing bowl and add the thinly sliced chicken pieces. Mix everything to combine, cover and place in the refrigerator for at least 30 minutes.

Once the chicken has marinated for at 30 minutes in the refrigerator, bring a large pot of water to boil and poach the chicken slices in the water until fully cooked. Strain out the chicken and rinse to remove and cooked egg whites on the chicken. Be sure to watch the pot because it can easily boil over.

In a small mixing bowl, whisk the sauce ingredients together until combine (soy sauce, sesame seed oil, sesame seeds, granulated garlic, powdered ginger, sugar and sriracha). Set aside until ready to use.

Cook the lo mein noodles according to the package directions, drain and set aside.

Blanch the cauliflower florets in boiling water for about 1 minute, strain and rinse under cold water to stop the cooking.

Heat a large sauté pan on the stove and add enough oil to lightly coat the bottom of the pan.

Add the noodles, blanched cauliflower and cooked chicken pieces. Stir fry everything together for a couple of minutes to heat through. Add the kale salad mix and stir fry everything together for a couple of minutes.

Add the prepared sauce and be sugar to immediately stir everything together, otherwise the sugar can easily burn.

Once everything is combined, serve and enjoy!
