Chicken Caprese
Here’s a delicious idea for dinner, chicken caprese.
Ingredients
2 chicken breasts, filleted
1 tbsp corn starch
1/2 cup prepared pesto
6-8 slices mozzarella cheese
6-8 roma tomatoes, quartered
1 tbsp balsamic vinegar glaze
Fresh basil, garnish
salt and pepper to taste
Instructions

Preheat oven to 400 degree’s.

Sprinkle chicken with cornstarch, salt and pepper. Spread evenly onto chicken breasts.

Heat an oven proof sauté pan on the stove and add enough oil to lightly coat the bottom of the pan.

Pan fry the chicken for about 4 minutes on on side, flip over and spread with pest sauce and place the mozzarella slices on top and spread the quartered tomatoes around the pan. Sprinkle with tomatoes with salt and pepper and place in the oven to finish baking off the chicken until the internal temperature is 165 degree’s.

Remove and sprinkle with freshly chopped basil, parsley and drizzle with balsamic glaze. Serve with your favorite sides and enjoy!
